Jennifer Swallow, RDN MS LDN, currently works as a clinical consultant dietitian in long term care. She completed a Master’s degree in Nutrition from Bowling Green State University, leading her to conduct a study on inflammatory bowel disease (IBD), comparing symptoms between vegan and omnivorous subjects. In 2009 she became a Certified Personal Trainer through the National Academy of Sports Medicine, and has sought out opportunities to integrate fitness and nutritional counseling for purposes of weight loss and general health promotion.
Jen is a member of, and occasional newsletter contributor for, the Research Dietetic Practice Group and the Vegetarian Nutrition Dietetic Practice Group of the Academy of Nutrition and Dietetics, and now serves as the South Carolina Coordinator for the Vegetarian Nutrition Dietetic Practice Group.
Jen is engaged extensively in community volunteer work involving disadvantaged or vulnerable populations, and is well versed in the particular challenges facing foster children, orphans, military families, and those dependent upon food donations. She frequently leads grocery store tours and cooking classes for low-income individuals on a volunteer basis. She has been a vegan and nutrition devotee for 16 years.
