Parul Kharod, MS RDN LDN is a Registered Dietitian and licensed nutritionist, and works as a Clinical Dietitian with Outpatient Nutrition Services at WakeMed Hospital in Cary and Raleigh, where she counsels the adult and pediatric population with an integrative approach.  Besides conducting individual counseling, Parul also teaches group classes for the hospital’s Diabetes Management program, advises at the Kidney Stone Clinic, and is active with the hospital’s Corporate and Community Health programs.  She is a frequent contributor to the hospital’s nutrition blog, writes a monthly health column for a regional magazine, and has written articles for her local newspaper and guest columns for various blogs.

Parul is a longtime member of the Board of Directors of Plant-based Prevention Of Disease, Inc. and has served as the Raleigh-area representative for the P-POD Program Committee for its Annual Conferences.

Parul is the Chair-Elect of the Vegetarian Nutrition Dietetic Practice Group (VNDPG) of the Academy of Nutrition and Dietetics, of which she has been an active member for many years.  She has previously served it in various roles as State Coordinator Program Chair, Speaker’s Bureau Chair, Nominating Committee Chair, and State Coordinator for North Carolina.

Parul has earned the Certificate of Training in Vegetarian Nutrition from the Academy of Nutrition and Dietetics.  She has also earned a Certificate of Training in Food Allergies from the Academy, and runs a support group for people with celiac disease and gluten intolerances in collaboration with the Celiac Disease Foundation and the Gluten Intolerance Group.  

Growing up in India with a family that has been vegetarian for generations, Parul has a true understanding of a plant-based lifestyle.  Having also had the opportunity to live in Kenya, France and several states across America, she has a global perspective about ethnic cuisines and diverse eating habits.  She is able to assist people in making appropriate changes to their diets while still conforming to their cultural preferences.   Being an avid cook, Parul loves experimenting in the kitchen with tasty and nutritious plant-based recipes.
